Vegan Chocolate Butter Cookies using Air Fryer

Although it’s still 3 weeks away from Christmas, I have already received my Christmas present, which is an Air Fryer! Yay! You can’t imagine how happy I am to receive this present.

For a long while, I have been looking around for an oven. I have look at countless oven but I just can’t seem to find one that I am satisfied with. So when my mom gave the Air Fryer to me for Christmas, it’s like my dreams come true. I can use it to fry, grill, roast and best of all, bake with it.

Immediately, I put it to use by baking my favorite Pineapple Tarts. I must say that I am amazed by the results. It’s totally like oven baked and it tasted so delicious!

This gave me an idea! Which is to bring happiness to kids this festive season by baking cookies for the children that go to the same temple as my brother.

So what should I bake? The first thing that came to my mind is Gingerbread man! I have never eaten or bake one before. So I started searching for its recipe. After going through the ingredients, I’m not sure if the kids will like the flavor.

That’s when I chance upon this site that has a 3 ingredient recipe for butter cookies which I really like as it’s really easy, eggless and it’s a recipe using the air fryer. This will save me a lot of testing to find the right baking time.

As  I have already bought the gingerbread man cookie cutter, I really want to use it. I have an idea of tweaking this recipe to make it into a chocolate butter cookies recipe. But before that, I needed to test the original recipe to see how the cookies turn out.

Here’s the result. I must say that I’m really pleased with it.

Now is the time to tweak the recipe.

As the kids are all vegetarian, I change the butter to margarine. Next, I added in cocoa powder to make it look like the traditional gingerbread man. Here’s the result after a few trial:

It looks good to me so I started to bake for the kids. It’s a “big project” as I need to bake 100pcs so that everyone can get to eat one.

And here’s my tweak recipe:

Vegan Chocolate Butter Cookies using Air Fryer


  • 70g plain flour
  • 50g margarine
  • 20g castor sugar
  • 10g cocoa powder


  1. Cream the margarine and sugar (roughly 2 min)
  2. Add in the cocoa powder and mix well (I used the electric mixer for this)
  3. Add in the flour to form a dough (It will feel a bit moist initially but keep mixing and you will get a dough that’s not sticky)
  4. Wrap the dough in a cling wrap and freeze for 15 to 30 mins
  5. Preheat the air fryer at 140 degrees for 5 min
  6. Roll out the dough and use your cookie cutter to cut out the dough (The yield will depend on the size of your cutter. My cutter is big so I get 4 cookies)
  7. Bake in the air fryer for 14-17min till the edges are firm

I will not share my icing recipe as it’s not as good as I would like it to be. I tweak this icing recipe by removing the milk so that might cause it to be not as good. There’s a lot of icing recipe out there so I’m sure you will be able to find one that suits your need.

P/S: The kids love the cookies. Some feedback that it’s a little bitter cos of the cocoa powder. If you like sweeter cookies, you can reduce the cocoa powder or increase the sugar. For me, I like just how the cookie taste. 🙂
